Insignificant Significance

It is funny how the things that may seem so insignificant to one person may become something so significant to another. I remember when I was a little girl that a neighborhood mom used to make carrot cake with cream cheese frosting from scratch. I, being a huge chocolate fan from early on, was enamored with this carrot cake. It became my favorite cake to this day. If there is a choice on a menu and the frosting is "cream cheese" I will always choose the carrot cake. I remember talking with the mom that introduced me to this heavenly cake just a couple of years ago. I told her how much I loved the cake when she made it for everyone when we were little. I also told her how much I loved visiting her house and being surrounded by the warmth, love and laughter. She said she did not remember that cake, but she was happy that I loved it and visiting so much. I said that every time I eat carrot cake I think of her. Well, today I made a batch of carrot cake cupcakes with cream cheese frosting. I thought of this dear woman while doing so. I make them for special occasions like my mom's birthday party in the picture. This beautiful neighborhood mom passed away last year and after the funeral, while crying, I managed to get a chuckle out of my friend and this mom's son by telling him about how much I loved his mom's carrot cake. How insignificant that carrot cake might have been to my neighborhood mom, but how significant it was to me. May our dear friend be at peace up in heaven.

    And I LOVE carrot cake, easily a tie with red velvet, hmmm, both have cream cheese frosting, maybe that's it!
